Homemade dressings spruce up boring salad mixes

Whether you prefer crispy iceberg lettuce or spinach leaves, salads are a favorite choice for meals due to their easy assembly and versatility.

A salad can come in any style, ranging from Greek and Caesar salads to Texas’ favorite taco salad.

What often sets one apart from another is the flavor of the dressing.

Whether you like spring mix or lettuce blends, these two recipes for vinaigrette dressings make great accompaniments to any basic salad.

Both dressings have a rich and slightly tart flavor, courtesy of the balsamic vinegar, Dijon mustard and red bell pepper. The dressings could also serve as marinades for meat or poultry.

Upon storage, natural separation of the ingredients is normal — they can be recombined by simple stirring. Store the dressing in recyclable glass jars to help the environment.

Frequent consumers of salad know that fancy dressings can often cost more than the price of the lettuce and other ingredients combined, so making your own can provide a homemade change of pace that is less expensive and offers more room for creativity.
